growing gratitude

Right now, I AM…

…thankful for wild apples.

…loving how when you leave the skins on the apples when you make applesauce it turns out pink.

…savoring the apple pancakes and apple pie we also made with apples this weekend.

…wondering how my little baby has almost doubled in size in five short weeks.

…feeling the season winding down.

…figuring it’s just about time to pull out some knit hats.

…smiling every time I look at these gourds.

…savoring winter squashes of all kinds in my belly.

…knowing there’s another batch or two of ketchup and salsa waiting to be made.

…thinking healing thoughts for Lake’s elbow…he fell from the monkey bars yesterday rendering a trip to the ER for him and Jason this morning.

  2. There’s nothing like seeing all those lovely jars of applesauce lined up in the pantry! I was also quite tickled to make a pink batch one day when peeling made the task seem so much bigger, but wasn’t that keen on the result. Do you have a preference either way?

      I guess it may depend on the kind of apples used, which unfortunately I do not know what kind these were. This batch turned out very tasty though. Up until now I’ve always peeled, but these apples were so small and randomly shaped that peeling was out of the question for me this time.

      The ER is an hour away. Lake’s elbow luckily is not broken. He is starting to be able to bend it a bit. Now he says he is just not big enough for monkey bars yet. Just Bella and Hawthorn are! Hopefully he will remember that.

  8. one of my favorite childhood memories was going to the upick and coming home with baskets full of apples every autumn. seeing all your apples brings back good memories.

    hope all is well with the elbow!

      We were lucky with this basket. My girls went to play at their friend’s house last week who has a neighbor with neglected old gnarley apple trees in her backyard. They went picking and brought home all this apple goodness. Many had worm holes and were “ugly” but they were super delicious and made a delicious apple pie!

    So funny, I was just sitting here thinking about how much I love when Honey Crisp apples come into season. The first ones arrived at the market this week, and I was dreaming of warm honeyed apple sauce on Saturday for our first autumn meal. Thank you for the reminder to find gratitude in those small, precious fruits.
